Brits That Bake - Chocolate Orange Cake


With no more Olympics and The Great British Bake Off back on the telly, its the perfect time to start baking. This is a tried and tested cake recipe - a combination of mothers advice and recipes from books. I like to think of it as a luxury Jaffa Cake. Bake and Enjoy!


  

Ingredients
200g caster sugar
125g butter, softened
2 eggs
1 tsp vanilla extract
250g self raising flour
Pinch of salt
1 whole orange
100ml water
200g super dark chocolate
Recipe
1)    Preheat the oven to 180degrees
2)    Cream the butter and caster sugar together until fluffy
3)    Slowly add the egg whilst mixing
4)    Add the vanilla essence
5)    Slowly fold in the self raising flour and add a pinch of salt
6)    Add the zest of the orange
7)    Cut off the remaining rind (white bit) and finely dice the orange pulp – taking care to remove any pips
8)     Stir in the diced orange pulp and water
9)    Add 100g of the dark chocolate diced into small cubes – stir well
10) Place mixture into lined baking tin and bake for around 40 minutes
11) Remove cake and place on wire rack
12) Once the cake has cooled, melt 100g of the dark chocolate with a knob of butter and completely cover the cake
13) Grate zest on top to finish
14) Eat with a large pot of tea!!!
